Tu BiShvat, the new year of the trees, is celebrated to honor nature, like a jewish Earth Day and Arbor Day all in one! Traditionally, one would eat the "Seven Species" mentioned in the Torah: wheat, barley, grapes, figs, pomegranates, olives, and dates.
